Made from young tea buds and the first two leaves of the Camellia sinensis plant, it produces a pale golden liquor with a delicate, naturally sweet flavour that has notes of fresh hay, light honey, and a subtle floral quality that's completely unlike any other tea. Cold-brewed overnight, White Peony is extraordinarily smooth — none of the astringency or bitterness that can appear in hot-brewed versions — and the flavour is clean, refreshing, and complex enough to drink slowly and appreciate. It's also naturally lower in caffeine than black or green tea, making it a wonderful afternoon or early evening option. White Peony pairs beautifully with a slice of fresh peach, a few dried rose petals, or a light drizzle of honey, but it's equally wonderful completely plain.
