Dried Apricots for Tea Infusions
Dried apricots are an underrated gem in the iced tea world — their concentrated stone-fruit sweetness and gentle tartness add a warm, summery depth to cold brews and fruit tea blends that fresh apricots simply cannot match. The drying process intensifies all the natural sugars and flavour compounds, so just a few pieces per litre of tea is enough to make a noticeable difference. They work beautifully with white tea, green tea, rooibos, and chamomile, and they pair naturally with vanilla, cinnamon, and ginger. For cold brew, add three or four dried apricot halves directly to your cold brew vessel along with your tea and steep overnight in the fridge — the result is a golden, fragrant brew with a natural sweetness that needs little or no added sugar. Look for unsulphured dried apricots (the darker, brownish ones) for the most authentic flavour — the bright orange variety has been treated with sulphur dioxide to preserve colour.
