Dried Blueberries for Tea & Infusions
Dried blueberries are one of the most rewarding fruit additions you can make to a cold brew or iced tea, and they're far more versatile than most people realise. The drying process concentrates the natural sugars and flavour compounds in blueberries, producing a more intense, jammy blueberry flavour than fresh fruit — and because they rehydrate slowly during a cold brew steep, they release their flavour gradually over several hours, resulting in a deeply infused tea with a beautiful purple-blue tint and a rich, fruity sweetness. They work particularly well with black tea, where the blueberry's sweetness softens the tannins and creates a flavour combination reminiscent of a blueberry jam on toast. They're also excellent with green tea and hibiscus, and they make a stunning addition to a cold brew white tea where the pale liquid takes on a delicate lavender hue. After steeping, the rehydrated blueberries can be eaten as a snack or used as a garnish. Look for unsweetened, unsulphured varieties for the cleanest flavour.
