Instructions

    Lightly bruise the peppermint leaves by clapping them between your palms — this releases the essential oils without tearing the leaves.

    Place the bruised mint in a large jar or pitcher. Pour the cold water over, stir gently, cover, and refrigerate for 8 hours.

    Strain through a fine mesh sieve into a clean pitcher. Discard the spent mint.

    Stir in honey and lemon juice if using. Taste — fresh peppermint cold brew is naturally sweet and intensely minty.

    Serve over ice with a fresh peppermint sprig.

Pro tip

Fresh peppermint gives a far more vibrant, clean flavour than dried peppermint tea bags. Do not exceed 10 hours of cold brewing or the mint can turn slightly grassy. This is an excellent base for a mojito-style mocktail — add lime juice, a splash of sparkling water, and a little simple syrup.
