Instructions

    Place tea bags in a clean glass pitcher or jar. Pour cold filtered water over them.

    Cover and refrigerate for 6–12 hours. 8 hours is the sweet spot — longer than 12 hours can introduce slight bitterness even with cold water.

    Remove tea bags gently without squeezing. The tea should be a pale golden-green, clear and bright.

    Serve over ice as-is, or with a small squeeze of lemon and a drizzle of honey. The tea is naturally sweet enough to drink plain.

Pro tip

Use the best quality green tea you can find — cold brewing amplifies the tea's character, so cheap tea tastes cheap and good tea tastes exceptional. Gyokuro produces an especially sweet, umami-forward cold brew. Loose leaf works perfectly: use 1 tbsp per 250ml and strain through a fine mesh sieve. This cold brew keeps in the fridge for up to 3 days.
