Instructions

    Combine chamomile flowers and cold water in a large jar or pitcher. Stir gently.

    Cover and refrigerate for 8–12 hours (overnight is ideal). Do not steep longer than 14 hours or the tea may turn bitter.

    Strain through a fine mesh sieve or cheesecloth into a clean pitcher. Discard the spent flowers.

    Stir in the honey and vanilla extract (if using). Taste and adjust sweetness.

    Serve over ice with a lemon slice. Keeps refrigerated for up to 4 days.

Pro tip

Use loose chamomile flowers rather than tea bags for a more complex, floral flavour. Warm the honey slightly before stirring in — it dissolves more easily in cold liquid. Add a sprig of fresh lavender to the cold brew for a lovely lavender-chamomile variation.
