Instructions

    Place the sencha leaves in a large jar or pitcher. Pour the cold filtered water over and stir gently.

    Cover and refrigerate for 6–8 hours. Sencha cold brews faster than black or oolong tea — 6 hours gives a lighter, sweeter result; 8 hours gives more body and depth.

    Strain through a fine mesh sieve into a clean pitcher. Do not press the leaves.

    Taste before adding anything — cold brew sencha is naturally sweet and needs no sweetener. Serve over ice, plain or with a lemon slice.

Pro tip

Cold brewing is arguably the best way to experience high-quality sencha — it extracts the amino acids (L-theanine, which gives the umami sweetness) while leaving the bitter catechins behind. Use the best sencha you can find; the quality difference is very apparent in cold brew. Gyokuro cold brews even more intensely — try it if you want a richer, more umami-forward version.
