Instructions

    Lightly bruise the mint leaves between your palms to release their oils. Combine with the black tea in a large jar or pitcher.

    Pour the cold filtered water over. Stir gently, cover, and refrigerate for 10–12 hours.

    Strain through a fine mesh sieve into a clean pitcher. Stir in honey if using.

    Serve over ice with a fresh mint sprig and lemon slice.

Pro tip

Spearmint gives a sweeter, rounder flavour here; peppermint gives a sharper, more intense cooling effect. Both work well — try each and see which you prefer. Do not steep longer than 12 hours or the mint can turn slightly bitter. This cold brew is excellent as a base for a Moroccan-inspired iced tea: add a squeeze of lemon and a pinch of cinnamon.
