Instructions

    Combine the Earl Grey tea and dried lavender buds in a large jar or pitcher. Pour the cold filtered water over and stir gently.

    Cover and refrigerate for 10–12 hours. Do not steep longer than 14 hours — the lavender can become soapy if over-steeped.

    Strain through a fine mesh sieve into a clean pitcher. Stir in honey if using.

    Serve over ice with a lemon slice and a pinch of dried lavender buds.

Use culinary-grade dried lavender — not potpourri or decorative lavender, which may contain fragrance oils. The ratio here gives a subtle lavender note that complements the bergamot without overpowering it. If you want a more pronounced lavender flavour, increase to 1.5 teaspoons. A splash of oat milk or cream turns this into a beautiful lavender Earl Grey latte. This is also excellent served sparkling — add a splash of sparkling water just before serving.
