Instructions

    Place the dried hibiscus flowers in a large jar or pitcher. Pour the cold filtered water over and stir gently.

    Cover and refrigerate for 8–12 hours. The longer it steeps, the deeper the colour and more intense the flavour.

    Strain through a fine mesh sieve into a clean pitcher, pressing gently on the flowers to extract all the liquid.

    Stir in honey and lime juice if using. Taste and adjust — cold brew hibiscus is naturally tart and may need sweetening.

    Serve over ice with a lime wheel.

Pro tip

Cold brewing hibiscus produces a smoother, less astringent result than hot brewing — the tart edges are rounded off and the floral notes come through more clearly. Dried hibiscus flowers (sold as flor de Jamaica at Latin grocery stores) are inexpensive and keep for months. The cold brew concentrate can be diluted to taste — start with a 1:1 ratio of concentrate to water and adjust. It also makes a stunning base for mocktails and cocktails.
