Instructions

    Combine the Darjeeling tea and cold filtered water in a large jar or pitcher. Stir gently, cover, and refrigerate for 10–12 hours.

    Strain through a fine mesh sieve into a clean pitcher. Do not press the leaves.

    Taste before adding honey — first flush Darjeeling cold brew is naturally sweet and complex, with pronounced muscatel (grape-like) notes.

    Serve over ice with a lemon slice.

Pro tip

First flush Darjeeling (harvested March–April) has the most pronounced muscatel and floral character — it is the ideal choice for cold brewing. Second flush is more robust and malty, giving a different but equally rewarding cold brew. Darjeeling is one of the most terroir-driven teas in the world — the same estate's first and second flush taste remarkably different. Both are worth trying cold.
