Instructions

  1. 1

Combine the chamomile flowers and cold water in a large jar. Stir gently, cover, and refrigerate for 8–10 hours.

  2. 2

Strain through a fine mesh sieve into a clean pitcher. Press the flowers gently to extract all the liquid. Discard the spent flowers.

  3. 3

Stir in the honey until dissolved. Add the lemon juice if using.

  4. 4

Taste and adjust sweetness. Cold brew chamomile is naturally sweet and floral — you may need less honey than expected.

  5. 5

Serve over ice with a fresh chamomile sprig or mint garnish.

Pro tip

High-quality loose chamomile flowers give a far more aromatic result than tea bags — look for them at health food stores or bulk tea shops. Do not exceed 12 hours of cold brewing or the flavour can turn slightly bitter. This is a wonderful bedtime drink as chamomile is naturally caffeine-free and mildly sedative.
