    Combine hojicha and cold water in a jar. Cover and refrigerate for 10–12 hours.

    Strain through a fine mesh sieve. Discard the spent leaves.

    Make the brown butter syrup: melt the butter in a small saucepan over medium heat, swirling constantly, until it turns golden and smells nutty, about 3–4 minutes. Remove from heat immediately.

    Whisk the sugar and hot water into the brown butter until the sugar dissolves. Let cool completely — the syrup will separate slightly; whisk again before using.

    Fill two glasses with ice. Pour the hojicha cold brew over the ice. Add the oat milk and drizzle 1 tbsp of brown butter syrup over each glass. Stir gently and serve.

Pro tip

Watch the butter carefully when browning — it goes from golden to burnt in seconds. The brown butter syrup keeps refrigerated for up to 2 weeks; re-whisk before each use as it separates. For a vegan version, use coconut oil in place of butter — it browns differently but adds a lovely tropical note.
