Watermelon Sweet Tea

Fresh watermelon juice blended into classic Southern sweet tea — bright pink, summery, and naturally sweet enough to need very little added sugar. The most refreshing sweet tea of summer, and the most beautiful.

    Steep the tea bags in boiling water for 5 minutes. Remove bags without squeezing. Stir in the sugar until dissolved. Let cool completely.

    Blend the watermelon cubes until smooth. Strain through a fine mesh sieve to remove pulp and seeds, pressing firmly to extract all the juice.

    Combine the cooled sweet tea, watermelon juice, lime juice, and cold water in a large pitcher. Stir well.

    Taste and adjust sweetness — ripe watermelon varies considerably in natural sugar content.

    Refrigerate until cold. Serve over ice with a small watermelon wedge and a mint sprig.

Pro tip

The sweetness of watermelon varies enormously — taste the juice before adding all the sugar and adjust accordingly. A very ripe, sweet watermelon may need no added sugar at all. The lime juice is important here; it brightens the watermelon and prevents the drink from tasting flat. For a sparkling version, replace the cold water with sparkling water.
