Brown Sugar Milk Tea

Inspired by Taiwanese tiger-stripe milk tea, this rich and creamy drink layers caramelised brown sugar syrup with strong black tea and cold milk. Indulgent, beautiful, and completely addictive.

Instructions

    Make brown sugar syrup: combine brown sugar and 1/4 cup water in a small saucepan. Simmer over medium heat, stirring, until sugar dissolves and syrup thickens slightly, about 3–4 minutes. Cool slightly.

    Steep tea bags in 300ml boiling water for 5 minutes. Remove bags. Let cool to room temperature.

    Drizzle brown sugar syrup around the inside of two tall glasses, coating the sides for the tiger-stripe effect. Fill glasses with ice.

    Pour cooled tea over the ice, then slowly pour cold milk on top. Stir gently before drinking to swirl the syrup.

Pro tip

The tiger-stripe effect only works if the syrup is warm and the glass is cold. Drizzle the syrup first, then add ice immediately — the contrast makes the stripes cling to the glass.
