Instructions

  1. 1

Steep the Thai tea mix in boiling water for 5 minutes. Strain through a fine mesh sieve or cheesecloth into a pitcher. Discard the tea leaves.

  2. 2

While the tea is still hot, stir in the condensed milk and sugar until fully dissolved.

  3. 3

Let the tea cool to room temperature, then refrigerate until cold, at least 1 hour.

  4. 4

Fill tall glasses to the brim with ice. Pour the chilled tea over the ice, filling each glass about three-quarters full.

  5. 5

Slowly pour the evaporated milk or cream over the back of a spoon so it floats on top, creating the signature two-tone look.

  6. 6

Serve immediately with a straw. Stir before drinking to combine the cream layer.

Pro tip

Thai tea mix is available at most Asian grocery stores and online — it gives the authentic orange colour and spiced flavour. If using plain black tea, add a pinch of ground star anise and a drop of vanilla for a similar profile. The tea base keeps refrigerated for up to 4 days; add the cream pour fresh each time.
