Fresh strawberries cooked into a vibrant ruby syrup and stirred into classic Southern sweet tea — bright pink, berry-sweet, and summery. The homemade strawberry syrup is what makes this exceptional; it tastes nothing like the artificial strawberry flavouring in commercial versions.

Instructions

    Steep the tea bags in boiling water for 5 minutes. Remove bags, stir in the 1/4 cup sugar until dissolved. Let cool.

    Make the strawberry syrup: combine the strawberries, 1/3 cup sugar, and 1/3 cup water in a small saucepan. Bring to a simmer over medium heat, stirring and mashing the strawberries until they break down, about 8 minutes.

    Strain the syrup through a fine mesh sieve, pressing firmly. Stir in the lemon juice. Let cool.

    Combine the cooled tea, strawberry syrup, and cold water in a pitcher. Stir well and refrigerate until cold.

    Serve over ice with a fresh strawberry slice on the rim.

Pro tip

The homemade strawberry syrup keeps refrigerated for up to 2 weeks — make a double batch and use it in sparkling water, lemonade, or cocktails. Very ripe, in-season strawberries give the most vibrant colour and flavour. Frozen strawberries work well out of season. For a sparkling version, replace the cold water with sparkling water added just before serving.
