Instructions

    Steep the tea bags in boiling water for 5 minutes. Remove bags, stir in the sugar until dissolved. Let cool.

    Make the peach syrup: combine the chopped peaches, sugar, and water in a small saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves and the peaches soften, about 8 minutes.

    Remove from heat and let steep for 15 minutes. Strain through a fine mesh sieve, pressing the peaches to extract all the syrup. Discard the solids.

    Combine the cooled sweet tea, peach syrup, and cold water in a large pitcher. Stir well. Taste and adjust sweetness.

    Refrigerate until cold. Serve over ice with a fresh peach slice.

Pro tip

The peach syrup is the star — use the ripest, most fragrant peaches you can find. Frozen peaches work well out of season. The syrup keeps refrigerated for up to 2 weeks and is also wonderful in sparkling water or cocktails. For a deeper peach flavour, add a split vanilla bean to the syrup while it simmers.
