    Combine sliced peaches, sugar, and 250ml of water in a small saucepan over medium heat. Simmer for 8 minutes until peaches soften and syrup thickens. Remove from heat and muddle the peaches gently.

    Strain the peach syrup through a fine-mesh sieve into a bowl, pressing the solids. Discard solids and set syrup aside.

    Bring 500ml of water to a boil. Remove from heat, add tea bags and basil leaves, and steep for 5 minutes. Remove bags without squeezing; discard basil.

    Combine the hot tea concentrate and peach syrup in a 2-litre pitcher. Stir well, then add the remaining 250ml of cold water.

    Cool to room temperature, then refrigerate for at least 1 hour. Serve over ice garnished with fresh basil sprigs and peach slices.

Pro tip

Use the ripest, most fragrant peaches you can find — frozen peaches work well in winter. Taste the syrup before adding; very sweet peaches may need less sugar.
