Mint Sweet Tea

Southern sweet tea steeped with a generous handful of fresh mint — cool, bright, and refreshing in a way that plain sweet tea never quite achieves. The mint steeps right with the tea bags for maximum flavour.

Instructions

    Place the tea bags and fresh mint leaves together in a heatproof pitcher. Pour the boiling water over and steep for 5 minutes.

    Remove the tea bags (do not squeeze). Stir in the sugar while still hot until fully dissolved.

    Let the mint continue to steep in the hot tea as it cools to room temperature, about 20 minutes. Strain out the mint.

    Add the cold water and stir. Refrigerate until cold.

    Serve over ice with a fresh mint sprig and a lemon slice.

Pro tip

Steeping the mint with the tea bags rather than adding it afterwards gives a much more integrated, natural mint flavour. Do not steep the mint for more than 25 minutes total or it can turn slightly bitter. Spearmint gives a sweeter, more delicate flavour than peppermint — either works beautifully.
