    Sift the matcha into a small bowl. Add the hot water and whisk vigorously in a W or M motion until fully dissolved with no lumps and a light froth forms on top.

    Stir in the honey if using. Let the matcha cool for 2 minutes.

    Fill two glasses with ice. Pour the tonic water over the ice first — this prevents the carbonation from going flat.

    Slowly pour the matcha over the back of a spoon to create a layered effect, or stir gently to combine. Garnish with a lime wedge.

Pro tip

Pour the matcha over the tonic slowly — it will float briefly before mixing, creating a beautiful green-over-clear layered effect. Use a good quality tonic water; the bitterness level varies considerably between brands. Fever-Tree or Q Tonic work particularly well here. For a cocktail version, add 30ml of gin before the tonic.
