Instructions

  1. 1

Sift the matcha powder into a small bowl or wide cup to remove any lumps.

  2. 2

Add the hot water (75–80°C — not boiling, which makes matcha bitter). Whisk in a brisk W or M motion with a bamboo chasen or a small electric frother until fully dissolved and slightly frothy, about 30 seconds.

  3. 3

If using sweetener, stir it into the matcha concentrate now while it's still warm.

  4. 4

Fill a tall glass with ice cubes.

  5. 5

Pour the cold milk over the ice first, then slowly pour the matcha concentrate over the back of a spoon to create a layered effect. Stir before drinking.

Pro tip

Sifting is non-negotiable — unsifted matcha clumps and never fully dissolves. For a stronger flavour, use 3 tsp matcha and reduce milk to 150ml.
