Matcha Raspberry Lemonade

    Make the raspberry lemonade: blend or muddle the raspberries until smooth. Strain through a fine mesh sieve. Combine the raspberry juice, lemon juice, 2 tbsp honey, and cold water in a small pitcher. Stir well.

    Sift the matcha into a small bowl. Add the hot water and remaining 1 tbsp honey. Whisk vigorously until smooth and frothy.

    Fill two glasses with ice. Pour the raspberry lemonade over the ice, filling each glass about two-thirds.

    Slowly pour the matcha over the back of a spoon to float it on top. Garnish with fresh raspberries.

Pro tip

The layered effect works best when the raspberry lemonade is cold and the matcha is at room temperature — the temperature difference helps them stay separate briefly. Stir before drinking to combine. Frozen raspberries work just as well as fresh and are available year-round. For a sparkling version, replace the cold water with sparkling water.
