    Make peach purée: blend peach slices with honey and lemon juice until completely smooth. Strain through a fine sieve for a cleaner texture. Stir in cold water.

    Sift matcha into a bowl. Add hot water and whisk until smooth and frothy.

    Fill two tall glasses with ice cubes.

    Pour the peach water over the ice, filling each glass about 3/4 full.

    Slowly pour the matcha concentrate over the back of a spoon to layer on top. Garnish with a fresh peach slice on the rim. Stir before drinking.

Pro tip

Frozen peaches work just as well as fresh — thaw them first and drain excess liquid before blending. White peaches give a more delicate, floral flavour; yellow peaches are bolder and sweeter.
