Instructions

    Make ginger infusion: combine sliced ginger with 100ml of the cold water in a small saucepan. Bring to a simmer over medium heat and cook for 5 minutes. Remove from heat and let cool for 3 minutes.

    Strain the ginger water into a pitcher. Stir in honey while still warm until fully dissolved. Add remaining cold water and lemon juice.

    Sift matcha into a bowl. Add hot water and whisk until smooth and frothy.

    Fill two glasses with ice. Pour the ginger honey water over the ice.

    Pour matcha concentrate over the back of a spoon to layer on top. Stir before drinking.

Pro tip

Don't add honey to boiling water — temperatures above 40°C destroy its beneficial enzymes. Let the ginger infusion cool slightly before stirring in the honey.
