Instructions

    Sift the matcha powder into a small bowl to remove any lumps.

    Add the cold water and whisk vigorously in a W or M motion until the matcha is fully dissolved and slightly frothy. A bamboo whisk (chasen) gives the best result, but a small regular whisk works too.

    Combine the coconut milk, maple syrup, and vanilla in a shaker or blender. Shake or blend briefly until combined.

    Fill two glasses with ice. Pour the coconut milk mixture over the ice.

    Slowly pour the matcha over the back of a spoon to create a layered effect. Garnish with toasted coconut flakes and serve immediately.

Pro tip

Use ceremonial grade matcha for the smoothest, least bitter flavour — culinary grade works but is more astringent when cold. Full-fat coconut milk gives a richer, creamier result than light coconut milk. Shake the coconut milk can well before opening as the cream separates.
