The ultimate bubble tea upgrade. Chewy tapioca pearls coated in caramelised brown sugar syrup, cold oat milk, and a bold matcha concentrate on top. This is the drink that made bubble tea famous — elevated.

Instructions

    Cook tapioca pearls: bring a large pot of water to a rolling boil. Add pearls and cook according to package directions (usually 20–25 minutes), stirring occasionally. Drain and rinse with cold water.

    Make brown sugar syrup: combine brown sugar and 3 tbsp water in a small saucepan over medium heat. Stir until sugar dissolves and the syrup thickens slightly, about 3 minutes. Remove from heat.

    Toss the warm cooked pearls in the brown sugar syrup. Let sit for 5 minutes to absorb the flavour.

    Sift matcha into a bowl. Add hot water and whisk until smooth and frothy.

    Divide the boba and syrup between two tall glasses. Add ice, then pour cold milk over the ice. Slowly pour the matcha concentrate over the back of a spoon to layer on top. Serve with wide boba straws.

Pro tip

Tapioca pearls must be used within 2–4 hours of cooking — they harden in the fridge. Cook them fresh each time. For tiger-stripe glasses, drag a spoon of brown sugar syrup up the inside of the glass before adding ice.
