Instructions

    Place the tea bags and dried lavender together in a heatproof pitcher. Pour the boiling water over and steep for 5 minutes.

    Remove the tea bags (do not squeeze). Stir in the sugar while still hot until fully dissolved.

    Let the lavender continue to steep as the tea cools, about 15 minutes. Strain out the lavender through a fine mesh sieve.

    Add the cold water and stir. Refrigerate until cold.

    Serve over ice with a lemon slice and a fresh lavender sprig if available.

Pro tip

Use culinary-grade dried lavender only — ornamental lavender is often treated with pesticides. Do not steep the lavender for more than 20 minutes total or the flavour can turn soapy. The amount of lavender here gives a subtle floral note; increase to 3 tablespoons for a more pronounced lavender flavour.
