Instructions

    Steep the tea bags in boiling water for 5 minutes. Remove bags without squeezing.

    Stir in the honey while the tea is still hot — honey dissolves much more easily in warm liquid. Add the lemon juice.

    Add the cold water and stir. Let cool to room temperature, then refrigerate until cold.

    Serve over ice with a lemon slice and a fresh thyme or mint sprig.

Pro tip

The flavour of the honey comes through clearly here — use a good-quality raw honey you enjoy eating. Wildflower honey adds a complex floral note; clover honey is milder and more neutral. Buckwheat honey is too strong and will overpower the tea. A sprig of fresh thyme in the glass is an unexpectedly lovely garnish.
