Instructions

    Add the dried hibiscus flowers to the boiling water along with the tea bags. Steep for 5 minutes — the water will turn a deep, jewel-toned crimson.

    Strain through a fine mesh sieve into a pitcher, pressing gently on the hibiscus. Stir in the sugar while still hot until fully dissolved.

    Add the cold water and lime juice. Stir well and taste — adjust sugar or lime to your preference.

    Refrigerate until cold. Serve over ice with a lime wheel.

Pro tip

The hibiscus adds both colour and a pleasant tartness — you may want slightly more sugar than a standard sweet tea to balance it. Dried hibiscus flowers (flor de Jamaica) are inexpensive and widely available at Latin grocery stores. For a more pronounced hibiscus flavour, increase to 4 tablespoons. This tea is also excellent served sparkling — replace the cold water with sparkling water just before serving.
