Instructions

    Add the sliced ginger to the boiling water and let it steep for 3 minutes before adding the tea bags. This gives the ginger a head start.

    Add the tea bags and steep for another 5 minutes. Remove bags without squeezing. Strain out the ginger.

    Stir in the sugar while still hot until fully dissolved. Add the lemon juice.

    Add the cold water and refrigerate until cold. Serve over ice with a thin ginger slice.

Pro tip

The amount of ginger here gives a noticeable but not overwhelming heat — increase to 3 inches for a more pronounced ginger flavour. For a milder version, add the ginger at the same time as the tea bags rather than steeping it first. A pinch of cayenne added with the ginger takes this in a completely different, exciting direction.
