    Add the cinnamon sticks to the boiling water along with the tea bags. Steep for 6 minutes — slightly longer than usual to allow the cinnamon to fully infuse.

    Remove the tea bags without squeezing. Leave the cinnamon sticks in for an extra 2 minutes, then remove.

    Stir in the sugar while still hot until fully dissolved. Brown sugar adds a lovely molasses depth that pairs beautifully with the cinnamon.

    Add the cold water and refrigerate until cold. Serve over ice with a cinnamon stick and lemon slice.

Pro tip

Brown sugar is the better choice here — its molasses notes complement the cinnamon and give the tea a warmer, more complex flavour than white sugar. For a stronger cinnamon flavour, add a pinch of ground cinnamon along with the sticks. A small piece of fresh ginger added with the cinnamon takes this in a wonderful direction. The cinnamon sticks can be rinsed, dried, and reused once more.
