Instructions

    Combine brown sugar, cinnamon sticks, and 250ml of water in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Simmer 5 minutes, then remove from heat and let steep 10 minutes.

    Bring 500ml of water to a boil. Remove from heat, add tea bags, and steep for 4 minutes. Remove bags without squeezing.

    Strain the cinnamon syrup into the hot tea. Add vanilla extract and stir to combine.

    Pour into a 2-litre pitcher and add the remaining 250ml of cold water. Stir well.

    Cool to room temperature, then refrigerate at least 1 hour. Serve over ice with a cinnamon stick garnish.

Pro tip

Dark brown sugar gives a deeper molasses flavour than light brown sugar. For a stronger cinnamon hit, add a third stick to the syrup.
