Instructions

    Cook the tapioca pearls according to the package instructions (typically 20–25 minutes in boiling water, then rest for 15 minutes). Drain and rinse with cold water.

    Make the brown sugar syrup: combine the brown sugar and water in a small saucepan over medium heat. Stir until the sugar dissolves, about 2 minutes. Add the cooked tapioca pearls and toss to coat. Keep warm.

    Steep the tea bags in boiling water for 5 minutes. Remove bags and let cool completely.

    Spoon the brown sugar boba into the bottom of two tall glasses. Drizzle some of the syrup up the inside of each glass for the tiger stripe effect.

    Fill the glasses with ice. Pour the cooled tea over the ice, then top with the chilled milk. Serve immediately with a wide boba straw.

Pro tip

Tapioca pearls must be used within 4 hours of cooking — they harden in the fridge. For the tiger stripe effect, use a spoon to drag the brown sugar syrup up the inside of the glass before adding ice. Wide boba straws are essential; regular straws will not fit the pearls.
