Instructions

    Steep the tea bags in boiling water for 5 minutes. Remove bags without squeezing. Stir in the 1/4 cup sugar until dissolved. Let cool.

    Make the blueberry syrup: combine the blueberries, 1/3 cup sugar, and 1/3 cup water in a small saucepan. Bring to a simmer over medium heat, stirring and gently mashing the berries until they burst and the syrup turns deep purple, about 8 minutes.

    Strain through a fine mesh sieve, pressing firmly to extract all the liquid. Stir in the lemon juice. Let cool.

    Combine the cooled tea, blueberry syrup, and cold water in a pitcher. Stir well and refrigerate until cold.

    Serve over ice with a few fresh blueberries floating on top.

Pro tip

The lemon juice brightens the blueberry colour and adds a subtle tartness that balances the sweetness beautifully. Frozen blueberries work just as well as fresh and are available year-round — wild blueberries give an even more intense flavour and colour. The syrup keeps refrigerated for up to 2 weeks. For a sparkling version, replace the cold water with sparkling water added just before serving.
