Instructions

    Steep the tea bags in boiling water for 5 minutes. Remove bags without squeezing. Stir in the sugar until dissolved. Let cool completely.

    Make the blackberry syrup: combine the blackberries, sugar, and water in a small saucepan. Bring to a simmer over medium heat, stirring and pressing the berries until they break down completely, about 8 minutes.

    Strain through a fine mesh sieve, pressing firmly to extract all the deep purple syrup. Stir in the lemon juice. Let cool.

    Combine the cooled sweet tea, blackberry syrup, and cold water in a large pitcher. Stir well and refrigerate until cold.

    Serve over ice with a few fresh blackberries on top.

Pro tip

Blackberries have a deeper, more complex flavour than raspberries — slightly more tart and earthy. Frozen blackberries are excellent here. For a mixed berry version, use half blackberries and half blueberries. The syrup stains easily, so use a dark-coloured pitcher or be careful with white surfaces.
