Ask any serious tea drinker what the most important variable in brewing is, and many will say water. Not the tea leaves. Not the temperature. Not the steep time. Water.

This sounds like tea snobbery until you actually taste the difference. Brew the same tea with filtered water and with hard tap water and the results can be dramatically different — one bright and clear, the other flat, murky, or oddly bitter. Here is what is actually happening, and what you can do about it.

What Is in Your Tap Water

Tap water is not just H₂O. It contains dissolved minerals, treatment chemicals, and sometimes organic compounds that all interact with tea in different ways.

Calcium and magnesium (hardness): These are the primary minerals that define "hard" water. They're not harmful to drink, but they significantly affect how tea brews and tastes.

Chlorine and chloramines: Most municipal water is treated with chlorine or chloramines to kill bacteria. These compounds have a distinctive smell and taste that can carry through into your tea.

Bicarbonates: These affect the pH of the water and can neutralise some of the acids in tea, flattening the flavour.

Iron and manganese: Present in some water supplies, particularly from older pipes. These can give tea a metallic taste.

Total dissolved solids (TDS): A measure of all dissolved minerals and compounds. Very low TDS water (like distilled water) and very high TDS water both produce inferior tea.

How Hard Water Affects Tea

Hard water is the most common water quality issue for tea drinkers in Canada. Many Canadian cities — including Toronto, Calgary, and Winnipeg — have moderately to very hard water.

The chemistry: Calcium ions in hard water bind to polyphenols (the compounds responsible for tea's flavour and colour) and form insoluble complexes. This is why hard water produces a cloudy, murky iced tea — you're literally seeing polyphenol-calcium complexes precipitating out of solution.

The flavour impact: Beyond cloudiness, hard water produces tea that tastes flat, dull, and sometimes slightly bitter or metallic. The bright, complex flavours of a good tea are muted. The finish is shorter and less satisfying.

The visual impact: Hard water iced tea often has a brownish, murky appearance rather than the clear amber or golden colour you get with soft water. This is particularly noticeable with black tea and green tea.

The scum: That film that forms on the surface of hot tea in hard water areas? That's the same polyphenol-calcium complex. It's harmless but unpleasant.

How Chlorine Affects Tea

Chlorine and chloramines are added to municipal water to make it safe to drink, but they're not flavour-neutral.

The taste: Chlorine has a distinctive chemical taste and smell that most people recognise from swimming pools. At the levels used in municipal water, it's subtle — but it's there, and it can affect the flavour of delicate teas.

The good news: Chlorine is volatile and dissipates relatively quickly. Leaving tap water in an open container for 30–60 minutes before brewing will reduce chlorine significantly. Chloramines are more stable and don't dissipate as easily — filtration is more effective for these.

Which teas are most affected: Delicate teas — white tea, light green teas, floral herbals — are most sensitive to chlorine. Robust black teas are less affected because their strong flavours mask the chemical notes.

The Ideal Water for Tea

Tea professionals generally agree on the characteristics of ideal brewing water:

Mineral content: Some minerals are beneficial. Magnesium in particular enhances the extraction of flavour compounds from tea leaves. The ideal TDS for tea is generally considered to be 75–150 mg/L — enough minerals to support good extraction, but not so many that they interfere with flavour.

pH: Slightly acidic to neutral water (pH 6–7) produces the best results. Alkaline water (high pH) can make tea taste flat and dull; very acidic water can make it harsh.

No chlorine: Filtered or rested water is preferable to water with noticeable chlorine.

Not distilled: Distilled water has zero minerals, which sounds ideal but actually produces flat, lifeless tea. The minerals in water play a role in flavour extraction.

Testing Your Water

If you're curious about your water quality, there are several options:

TDS meter: An inexpensive digital meter (available for under $20) measures total dissolved solids in your water. This gives you a quick sense of mineral content.

Home test kit: Basic water test kits test for hardness, pH, chlorine, and other parameters. Available at hardware stores and online.

Municipal water report: Most Canadian municipalities publish annual water quality reports. These give detailed information about mineral content, treatment chemicals, and other parameters.

Taste test: The simplest approach. Brew the same tea with your tap water and with filtered water and taste them side by side. If there's a noticeable difference, filtration is worth considering.

Solutions for Better Iced Tea Water

Filtered Water

A basic carbon filter (like a Brita pitcher or under-sink filter) removes chlorine, chloramines, and some organic compounds effectively. It does not significantly reduce hardness (calcium and magnesium), but it does remove the chemical taste that chlorine adds.

For most Canadian tap water, a carbon filter is the single most impactful improvement you can make to your brewing water.

Filtered + Softened Water

If you have very hard water, a water softener removes calcium and magnesium by replacing them with sodium. The resulting water brews clearer, brighter tea. However, softened water has elevated sodium content, which some people prefer to avoid.

Reverse Osmosis (RO) Water

RO systems remove almost everything from water, producing very low TDS water. This is actually too pure for ideal tea brewing — you'll want to add a small amount of mineral-rich water back in, or use a remineralisation filter stage. Some RO systems include this.

Bottled Spring Water

A practical option if you don't want to invest in filtration. Look for spring water with a TDS of 75–150 mg/L and a neutral pH. Evian (TDS ~309) is on the high end; Volvic (TDS ~130) is often cited as ideal for tea.

Letting Tap Water Rest

For chlorine specifically, filling a jug with tap water and letting it sit uncovered for an hour before brewing will reduce chlorine significantly. This is free and requires no equipment.

Practical Recommendations by Tea Type

Black tea (sweet tea, iced tea): Moderately hard water is actually fine for robust black teas — the minerals can enhance body and mouthfeel. Carbon filtration to remove chlorine is the main improvement worth making.

Green tea: More sensitive to water quality. Filtered water with moderate mineral content produces the best results. Avoid very hard water, which will make green tea taste flat and murky.

White tea: The most delicate category. Use filtered water with low to moderate mineral content. Hard water will significantly mute the subtle flavours.

Herbal tea: Varies by herb. Robust herbals like hibiscus and ginger are relatively forgiving. Delicate florals like chamomile and elderflower benefit from filtered water.

Cold brew: Cold brewing is actually more forgiving of water quality than hot brewing, because the slow, cold extraction process is less aggressive. That said, filtered water still produces a cleaner, clearer result.

The Cloudiness Question

Iced tea cloudiness is one of the most common questions we get, and water quality is one of the main causes — but not the only one.

Hard water cloudiness: Caused by polyphenol-calcium complexes. Filtered or softened water prevents this.

Refrigeration cloudiness: Even with soft water, iced tea can turn cloudy when refrigerated. This is caused by tannins and other compounds precipitating out at cold temperatures. It's harmless and the tea will clear when it warms up slightly. To minimise it, let tea cool to room temperature before refrigerating.

Over-steeping cloudiness: Steeping tea too long or at too high a temperature extracts excess tannins, which can cause cloudiness regardless of water quality.

The Bottom Line

Water quality genuinely matters for iced tea, and the impact is most noticeable with delicate teas and in areas with hard or heavily chlorinated water.

The single most impactful change most people can make is using a basic carbon filter to remove chlorine. If you have very hard water and your iced tea consistently turns out murky and flat, a water softener or RO system will make a significant difference.

For most people in most Canadian cities, filtered tap water produces excellent iced tea. You don't need to buy expensive bottled water or invest in elaborate filtration — a $30 pitcher filter is often all it takes to go from mediocre to genuinely good.

The tea matters. The temperature matters. The steep time matters. But so does the water — and it's one of the easiest variables to improve.
