Instructions

    Steep the white tea in 75°C water for 4 minutes. White tea is extremely delicate — use a thermometer if you have one. Water that is too hot will produce a flat, papery flavour.

    Strain gently into a pitcher. Stir in honey if using.

    Add the cold water and let cool to room temperature. Refrigerate until fully chilled.

    Serve over ice with a thin lemon slice. White tea is best enjoyed without strong garnishes that would overpower its subtle flavour.

Pro tip

Silver Needle (Bai Hao Yinzhen) is the most prized white tea — made only from the unopened buds of the tea plant. Bai Mu Dan (White Peony) uses buds and young leaves and has a slightly fuller flavour. Both are beautiful iced. White tea is naturally very low in caffeine, making it a good afternoon or evening option.
