Instructions

    Steep the white tea bags in 75°C water for 3 minutes. Remove bags and let cool.

    Add the cucumber slices and mint leaves to the warm tea. Let steep as the tea cools to room temperature, about 20 minutes.

    Strain through a fine mesh sieve into a pitcher. Add the cold water and honey if using.

    Refrigerate until fully chilled.

    Serve over ice with fresh cucumber rounds and a mint sprig.

Pro tip

Use 75°C water for white tea — boiling water destroys its delicate flavour. English cucumber has a thinner skin and milder flavour than field cucumber, making it ideal here. For a more intense cucumber flavour, add the slices to the cold pitcher and refrigerate overnight.
