Instructions

    Combine the green tea, crushed cardamom pods, cinnamon stick, and ginger slices in a heatproof pitcher.

    Pour the 80°C water over and steep for 3 minutes. Strain immediately — green tea turns bitter quickly, especially with spices.

    Stir in the honey while still warm. Add the cold water and let cool to room temperature.

    Refrigerate until cold. Serve over ice with a cinnamon stick.

Pro tip

Lightly crushing the cardamom pods (just enough to crack them open) releases the aromatic seeds without making the flavour overwhelming. Bancha green tea is more forgiving than sencha here — its lower caffeine and more robust character holds up better to the spices. For a creamier version, stir in a splash of oat milk just before serving.
