Instructions

    Heat water to 80°C (let boiling water cool 2 minutes). Add green tea bags and fresh mint leaves. Steep 2 minutes exactly — no longer.

    Remove tea bags and strain out mint. Stir in honey or simple syrup if using.

    Add 250ml cold water and lime juice. Let cool to room temperature.

    Refrigerate until cold. Serve over ice with fresh mint sprigs and a lime wheel.

Pro tip

Steep the mint with the tea bags — not separately — so the flavours meld together from the start. Lime juice works better than lemon here; it complements the grassy notes of green tea.
