    Sift matcha powder into a small bowl or cup to remove any lumps — this is the most important step for a smooth, clump-free drink.

    Add 60ml of hot water (70–80°C). Whisk vigorously in a W or M motion with a bamboo chasen or small whisk until fully dissolved and slightly frothy, about 30 seconds.

    If using sweetener, stir it into the matcha concentrate now while it's still warm.

    Fill a glass with ice. Pour the cold water over the ice, then pour the matcha concentrate over top. Stir gently and serve immediately.

Pro tip

Water temperature matters enormously — boiling water makes matcha bitter and dull. Use water that's just off the boil and left to cool for 2 minutes, or use a kettle with temperature control set to 75°C. Ceremonial grade matcha is worth the investment for drinking straight; culinary grade is better suited to lattes and smoothies where other flavours are present.
