    Combine water, cinnamon sticks, cardamom, cloves, and ginger in a small saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.

    Add the tea bags and steep off the heat for 4 minutes. Remove bags without squeezing.

    Stir in the brown sugar until dissolved. Add the milk and return to a gentle simmer for 2 minutes.

    Strain the chai through a fine mesh sieve into a pitcher. Discard the whole spices.

    Let cool to room temperature, then refrigerate for at least 1 hour until cold.

Use whole spices for the best flavour — pre-ground spices can make the tea murky. For a stronger spice hit, simmer the spices for 10 minutes before adding the tea bags. This keeps refrigerated for up to 3 days — the spice flavour deepens overnight.
