Instructions

    Steep the sencha in 80°C water for 2 minutes. Remove leaves immediately and let cool completely. Do not over-steep — bitterness is amplified when carbonated.

    Stir in the honey and lemon juice while the tea is still slightly warm so the honey dissolves fully.

    Refrigerate the tea base until cold.

    When ready to serve, fill glasses with ice. Pour the chilled tea base halfway, then top with sparkling water. Stir gently once — do not over-mix or you will lose the bubbles.

    Garnish with a lemon wheel and a mint sprig. Serve immediately.

Pro tip

Always add the sparkling water last and just before serving — it goes flat quickly once mixed. For a more intense lemon flavour, add a strip of lemon zest to the tea while it steeps. Jasmine green tea works beautifully here as a variation — the floral notes pair wonderfully with lemon and bubbles.
