    Steep the sencha in 75°C water for exactly 2 minutes. Sencha turns bitter quickly — use a timer.

    Strain immediately into a pitcher. Stir in the honey while the tea is still warm.

    Add the cold water and let cool to room temperature. Refrigerate until fully chilled.

    Stir in the yuzu juice just before serving.

Bottled yuzu juice is available at Japanese grocery stores and many Asian supermarkets — it keeps refrigerated for months. If yuzu is unavailable, a mix of equal parts lemon and grapefruit juice is the closest substitute. Add the yuzu just before serving to preserve its bright, volatile aroma.
