    Combine the tea bags and dried rose petals in a heatproof pitcher. Pour the boiling water over and steep for 4 minutes.

    Strain through a fine mesh sieve into a clean pitcher. Discard the tea bags and petals.

    Stir in the honey while still warm. Add the cold water and let cool to room temperature.

    Refrigerate until cold. Serve over ice, garnished with a few fresh dried rose petals and a lemon slice.

Pro tip

Use culinary-grade dried rose petals only — ornamental roses are often treated with pesticides. Rose syrup (available at Middle Eastern grocery stores) gives a more intense floral flavour than honey. For a sparkling version, top each glass with a splash of rose-flavoured sparkling water.
