    Combine the oolong tea and dried osmanthus flowers in a heatproof pitcher or teapot.

    Pour the 90°C water over and steep for 3 minutes. Strain immediately — oolong can turn bitter if over-steeped.

    Taste before adding honey — osmanthus adds a natural apricot-like sweetness that may be sufficient on its own.

    Add the cold water and let cool to room temperature. Refrigerate until fully chilled.

    Serve over ice with a pinch of dried osmanthus flowers floating on top.

Dried osmanthus flowers are available at Chinese grocery stores and online — they keep for months in an airtight jar. The flowers have a remarkable apricot and peach fragrance that is unlike any other floral tea ingredient. Tieguanyin (Iron Goddess) oolong is the classic pairing, but any medium-roast oolong works beautifully. This tea is also excellent cold-brewed overnight.
