Instructions

    Steep the oolong in 85°C water for 3 minutes. Oolong is sensitive to temperature — boiling water will make it bitter and destroy its floral character.

    Strain into a pitcher. Stir in honey if using while still warm.

    Add the cold water and let cool to room temperature. Refrigerate until fully chilled.

    Serve over ice with a lemon slice.

Pro tip

Oolong is one of the most versatile teas for iced brewing. Tie Guan Yin (Iron Goddess) is floral and light; Dong Ding is roasted and slightly nutty. Both are excellent cold. High-quality oolong can be re-steeped two or three times — each steep reveals a slightly different character.
