Matcha Watermelon Iced Tea

Fresh watermelon juice is naturally sweet, 92% water, and the most vivid pink imaginable — it layers beautifully under a matcha pour to create a drink that looks like a sunset and tastes even better.     Blend watermelon cubes until smooth. Strain through a fine mesh sieve to remove pulp — you want clear, vivid juice. Stir in lime juice and honey if using. Refrigerate until cold.

    Sift matcha into a small bowl. Whisk with 60ml of 75°C water until smooth and frothy.

    Fill a glass with ice. Pour the cold watermelon juice over the ice.

    Slowly pour the matcha concentrate over the back of a spoon onto the watermelon juice — it will float briefly, creating a beautiful green-on-pink layer. Garnish with a small watermelon triangle and serve immediately.

Pro tip

The layered effect works best when the watermelon juice is very cold and the matcha is poured slowly. Don't stir before serving — let guests admire the layers, then stir to combine. Seedless watermelon makes blending much easier. For a sparkling version, replace half the watermelon juice with sparkling water.
