Instructions

    Combine grated ginger, turmeric, black pepper, honey, and lemon juice in a small bowl. Add 60ml of 75°C water and stir well to dissolve. Let steep for 5 minutes, then strain through a fine mesh sieve.

    Sift matcha into the strained ginger-turmeric liquid. Whisk vigorously until smooth and frothy.

    Add 1 cup of cold water to the concentrate and stir to combine.

    Pour over ice in two glasses. The drink will be a beautiful earthy green-gold. Serve immediately.

The black pepper is not optional — it increases turmeric's bioavailability by up to 2000% by inhibiting its rapid metabolism. Fresh turmeric root (available at most health food stores and Asian grocers) gives a brighter, less bitter flavour than ground.
